Blanco

This remarkable cane spirit was the inspiration that started it all. Our first expression to be bottled, this unaged expression is a blend of four different cane varietals, harvested and pressed together, and fermented for up to four months, producing a spirit of unrivaled complexity.

Produced from 100% cane juice, with no water added at any point in the process, including fermentation and post-distillation, this aguardiente de caña is quite simply the purest expression of cane flavor on the market.

Cane Varietals: Criolla, Morada, Dulce, Dura

Fermentation: Fresh juice blended with juice of up to four months in open-air vats with native yeast.

Distillation: 9 hour single-distillation in a copper pot hybrid still with 6-plate copper column. Cuts made at 85°, 80°, 65°, 20°, & 5°.

Bottling: Cuts blended together to 54% ABV. Bottled with no added water.

 

Caña Morada Single Varietal

Perhaps it was because of our background in mezcal? Or no, maybe it was that we geek out about wine? Or we constantly wonder what things taste like? Well whatever it was, one of the first things we asked Jose Luis upon learning his process was whether or not he had ever tried single-varietal distillations.

The first release of our single-varietal explorations was Caña Morada. And to put it simply, we were blown away. Alongside the vibrant cane flavor and slight maritime salinity, there was an explosion of spice notes, particularly sweet cinnamon reminiscent of Big Red Gum, or Atomic Fireball Candy. It was quite fun to be unexpectedly transported back to childhood! Due to the production process, these limite single varietal expressions can only produced when Jose Luis has an empty fermentation tank after he has finished distilling a batch of Paranubes Blanco. As such, these single-varietal expressions are produced regularly, but in a limited, seasonal capacity.

Due to the amped-up spice notes, we find that Paranubes Caña Morada is wonderful sipped on its own, but it shows exceptionally well in tropical cocktails like a Mai Tai, Zombie, or Jet Pilot.

Caña Criolla Single Varietal

Paranubes Blanco is a blend of four different cane varietals, with 85% of that blend being Caña Criolla. The most commonly planted variety of cane in the region, it has the highest sugar content, thereby producing the highest yield. It also lasts the longest in the field (up to six months), once it reaches maturity. Like Caña Morada Single Varietal, this expression can only be produced when Jose Luis has a clean empty tank after producing a batch of Paranube Blanco. As such, these single varietal expressions are produced regularly, but in a limited, seasonal capacity.

Caña Criolla has incredibly rich savory notes along with over-ripe tropical fruit and a peppery grassy nose.

Añejo

Jose Luis and the community have not traditionally consumed wood-aged aguardiente, so our aging program has become our space to explore our creativity.

Since we are a very small production, one of the first things we learned as we started to age Paranubes was that if you are not purchasing in large volumes it is difficult to source used oak barrels of good quality and verifiable provenance. Our answer was just to take a deep-dive, buy our own new barrels, and learn how wood evolves over time. As such, our Añejo expression continues to evolve with our barrels and tastes. Originally aged for 18 months to prevent the barrel flavor from taking over, we have now stretched that aging time to 24 months as the barrels have seasoned, and the vanillin and tannins have softened. If you spot an 18-month añejo, grab it as it was a brief moment early in our aging journey!

We decided to name our aged expressions añejo an an homage to the long history of Tequila aging, as our very first experiments in aging were in ex-Tequila casks. While we have since moved on to proprietary casks rather than ex-Tequila for our base Añejo, don’t worry we will still be bottling ex-Tequila-aged Paranubes as limited releases!

Single Casks

While the base of our aging program consists of Paranubes Blanco aged 24, we do occasionally encounter particular barrels in our aging stock. When we find one that shows potential, we take note and carefully track its evolution. These barrels are then bottled as limited single-barrel expressions.
